#34 - Try 20 New Desserts 1 of 20

Hailey and I made the best caramel popcorn in our Christmas candy extravaganza.  I am pretty sure its what crack is made of.  We went through two batches in about a day.  I thought I would post the recipe because it's amazing.

1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla
2 cups unpopped popcorn

Use a popcorn popper to pop the popcorn kernels

Preheat oven to 250 degrees

In a medium sauce pan melt the butter.  Once melted stir in the brown sugar, corn syrup and salt.  Bring to a boil stirring constantly.  Once it's boiling let it boil without stirring for 4 minutes.  Remove from the heat, stir in the baking soda and vanilla.  Place popcorn in a single layer on a cookie sheet ( I had to use two cookie sheets).  Pour the caramel over the popcorn in a thin stream.  Place cookie sheets in the oven.  Bake for one hour, stirring the popcorn every fifteen minutes.
